Cuz NFL coaches are risk averse and would rather have an opponent start on the 25 and not be questioned, instead of the 35-40 and get questioned about it.

Why not onside kick there? You're kicking from the 50. If you kick it 10-15 yards you might end up stealing a possession. If not, the Redskins get the ball at the 35.
If you kick it out of the end zone, they get the ball at the 25. It's a 10 yard difference.
