Pisses me off they perfected crawfish boils, too.  We have plenty of crayfish in Wisconsin, and all we did was boil 'em in water.

1000% agree.  I grew up there. The best food in teh world is S La food. I was raised on Jambalya, Gumbo, and etoufee. Would go catch tub fulls of crawfish and boil them. . The radio was talking about a place in TAmpa that had authentic cajun food so went there a couple of weeks ago. Won't be going back. Need my brother to send me some Bouidin. Yummy.

I really don't remember but I am thinking it was not perch.

Ugh. Always always always ask the locals!!! I'll be doing just that when I go to New Orleans for the Packers/Saints.
I want to find that famous fried chicken place I saw on the Bizarre Foods America show.

My brother has tickets to the SAints/Packers game. He asked me to go but not sure if I want to make the journey.

 

You can't go wrong with any place in New Orleans. Just be sure and sample it all. Crawfish etoufee is my absolute favorite. The gumbos are a little tricky because many like to put Okra in it and I hate Okra in my gumbo. Be sure and get the Beignets at Cafe du Monde. You have to do taht regardless of whever else you eat.

 

Chilli mentioned Red Beans and Rice with Andouille, that is some good stuff right there.

I doubt it was walleye he had.  They have other fish on the menu that those out of the loop sometimes order, like bluegill, catfish, I think even (gasp) sheepshead.  Whatever, their specialty is perch.  You go there for perch.  GreenBayites debate boneless vs. bone in, and the Schmelt (seasonal) is tempting, but you have their perch (boneless!) just once, and you'll dream about it for years. (Honest.)

 

Edit: looked at their menu, it was whitefish he probably had. Walleye is not on even the menu, just "Pike" (wink wink).

It's awesome, been to a couple of them.

 

I do a minimum 2 times a year with the Parents an Sis to the Pinewood in Mosinee.  Fantastic.  It's out on a little ithsmums on horseshoe lake.  Fantastic food at good prices.  There's no relish tray anymore, they used to give it to you on a lazy susan type rotary tray in the middle of the table, but the over-sumptuous salad is fine.  I also recommend the crab wontons thingies.  Very good.!

 

What it misses is the traditional WI supper club salad bar.  For that I recommend the Buc'a'neer in Marshfield and even the Branding Iron by Wiskey Rapids.  Also Silverlake is great down by Waupan.

I don't think there's such a thing as "southern food", everything is regional. You have a few things that are consistent throughout, but the food can vary greatly by going just a couple hours in any direction. Within TN you have three distinct regions and they have different inspirations. When you're in Louisiana are you talking Canjun in the SW or Creole in the city. North Carolina makes different BBQ throughout the state and South Carolina is different than that. It also depends on what you call the South too because I don't consider Virginia or West Virginia or most of Kentucky part of the South, but many do. You so many different influences on all the Southern regions whereas the North/Midwest I feel like you have mostly straight Northern European influence, especially German and Scandinavian. That's a very unique palette of food and if you're not raised on then I feel like it's hard to understand or enjoy.
